2. Preheat the grill to 200F with the flame diffuser closed.
3. Line a large baking sheet with parchment paper, roll it into golfball-sized meatballs, and place it onto the sheet.
4. Place the baking sheet onto the grill, and shut the lid. Smoke for 35 minutes. Flip the meatballs once, and then turn the temperature up to 325F, and cook for an additional 25-30 minutes, or until the internal temp of the meatballs is 160F.
5. Serve hot.
