Sweet chili chicken leg quarters
Mesquite, Hickory, Lychee, Cherry
Ingredients
• 8 Chicken Leg Quarters.
• 3 Tbsp. Olive Oil.
• Seasoning Rub of Choice.
• Sweet Chili Sauce.
Steps
1. Preheat grill to 350-400°F with flame diffuser open.
2. Brush the chicken with olive oil and then season with LOTS of seasoning rub of your choice.
3. Place skin-side up on the grill, and grill for 15-20 minutes. Flip and grill an additional 10-20 minutes. When the chicken gets to 150°F internal, crank up the grill to high (450-500F) and finish off the grilling until the internal temperature is 165°.
4. Pull off the grill and let rest for 10 minutes before serving.
