Pellet Roasted feta pasta
A Wood Fire Roasted Delight

Ingredients

• 1/4 Cup Olive Oil

• 1 Block of Feta Cheese

• 3 Cups Cherry Tomatoes, Cut in Half

• 1 Red Bell Pepper, Cored and Sliced

• 6 Fresh Basil Leaves

• 3 Cloves Minced Garlic

• 2 Tbsp. Rub of Choice

• 1/2 Cup Dry White Wine

• 1/4 Cup Heavy Cream (Optional)

• 1 Pound Pasta of Choice

Steps

1. Preheat your grill to 375°F with flame diffuser closed.

2. Pour the olive oil into the bottom of a high-sided grill-safe pan or disposable foil pan. Next, add the feta in the middle, add all of the vegetables around the feta, and top with the herbs, garlic, and other seasonings. Gently pour in the white wine last.

3. Roast (350F) for at least 30-45 minutes, but check it periodically to make sure that it isn’t scorching over any hot spots.

4. Boil the pasta in well-salted water. Drain and set aside.

5. Toss in with the feta mixture until it is well-distributed. If you like things a little saucier, you can throw in 1/4 cup of pasta water and/or a little heavy cream.
