Smoked salsa
Mesquite, Hickory, Lychee
a Classic Pico With A Smokey Twist.
Ingredients
• Roma Tomatoes
• Onion
• Lime
• Garlic
• Jalapenos
• Cilantro
• Olive Oill
• Salt
• Black Pepper
Steps
1. Cut the tomatoes and jalapenos into slices. Toss the fresh tomatoes, jalapeños, onion, and cloves of garlic with olive oil, salt, and black pepper in a bowl until the vegetables are well-coated.
2. Spread the vegetables on a sheet pan with a wire rack, or directly onto the grill grates. Place it in a 225F smoker and close the lid with the flame dampener closed. Smoke until the vegetables are softened with smoke flavor infused.
3. To make the base of our salsa, add the tomatoes to a food processor and blend until desired consistency.
4. Transfer the tomato base to a large bowl. Finely chop the garlic, jalapeños, onion, and cilantro and stir those into the salsa along with some fresh lime juice and salt.
